While the future Dr. hubby has been away for his away rotations I have been doing my best to keep busy and have a little “me” time. Last night my mom came to my apartment to have dinner with me. For a while now I had been telling her that future Dr. Hubby and I love to make homemade pizzas (when we have the time) – so she wanted to get in on the action :-). The great thing about making homemade pizza is that you can make it as healthy (or not) as you want. Future Dr. Hubby and I have done a number of variations in the past: veggies, meat lovers, chicken pesto, margarita etc. Last night I chose to do our take on a pepperoni pizza! Thank you, Mom, for our dinner date!
Ingredients Used for our Pizza:
- Boboli 12″ Whole Wheat Thin Pizza Crust
- Fresh bulb of mozzarella
- Fresh thin sliced pepperoni
- Pesto (Classico Traditional Basil Pesto)
- Green Pepper
